Our modern take on the American IPA focuses on a rounded mouthfeel and an explosion of aroma, without overwhelming the palate with bitterness. The brewing process incorporates a high percentage of flaked oats and wheat, lending the beer a velvety, almost milky texture reminiscent of freshly squeezed fruit juice (featuring a stable colloidal haze). Through post-primary fermentation dry-hopping, we extract essential oils and terpenes from Citra and Galaxy hops to develop intense aromas of passion fruit, mango, and citrus, all with minimal, exceptionally smooth residual bitterness.

Unlike NEIPAs, Coule Douce IPA honors the technical heritage of authentic Anglo-American IPAs by bringing bitterness and complex hop-resin character to the forefront. Hopping during the boil provides a clean, assertive alpha-acid foundation that refreshes the palate. On the palate, it reveals a dry, herbaceous profile with distinct notes of resinous pine and lemon zest—a beer with real character, reminiscent of the historic, heavily hopped brews designed to survive long sea voyages to India.

Originating on the farms of Wallonia, the Farmhouse Ale style was traditionally brewed in winter to quench the thirst of seasonal farmhands during the summer harvest. Our version relies on a specific, highly attenuative yeast strain that consumes almost all residual sugars. The result is a light-bodied, thirst-quenching beer with an extremely dry finish. High-temperature fermentation develops naturally fruity esters alongside subtle, peppery, and rustic phenolic notes.

Une bière de fermentation haute d’inspiration traditionnelle belge, brassée avec une part importante de blé non malté et d’avoine. Ces céréales apportent des protéines en suspension qui, combinées aux levures spécifiques, donnent à la bière sa robe naturellement opalescente et son toucher de bouche soyeux. En fin d’ébullition, nous infusons des graines de coriandre fraîchement concassées et des écorces d’orange amère, conférant à l’ensemble une vivacité citronnée et un parfum floral d’une grande finesse.

La Coule Douce Stout derives its deep complexity and ebony-black hue from the meticulous use of highly roasted barley and caramelized malts during the mash. Subjecting the grains to high temperatures (triggering Maillard reactions) develops a rich, indulgent flavor profile reminiscent of freshly brewed espresso, intense dark chocolate, and toasted bread crust. Warm fermentation gives the beer a lovely roundness on the palate—without heaviness—complemented by a perfectly balanced grain-derived bitterness.

Chouchoute

Brewed in Northern France using our exclusive recipe, Chouchoute is crafted using the traditional upward infusion mashing technique. Adhering to these specific temperature stages extracts complex fermentable sugars and gives the wort a rich structure. Fermented with top-fermenting yeasts selected for their intense aromatic profile, it delivers a robust malty character on the palate, crowned by a dense, persistent white head. A gourmet beer best enjoyed at cool cellar temperatures (8°C to 10°C).

The most potent beer in our range, brewed in the North according to our own recipe. La Dragonne relies on a special yeast strain capable of withstanding high alcohol levels while developing a complex ester profile. Beneath a rich, creamy head, it reveals a rounded, smooth, and malt-rich opening, evolving into warming aromas of white-fleshed fruit and subtle spicy yeast notes.

Gargantua

An amber ale of great technical complexity, in which the noble herbal character of the hops harmonizes perfectly with the caramel notes of specially selected malts. Its profile is enhanced by a bottle-conditioning process: the precise addition of live yeast before capping allows for cellar maturation. This natural aging protects the beer from oxidation and produces exceptionally fine carbonation. Serving tip: pour carefully at around 10°C to keep the natural yeast sediment at the bottom of the bottle.

La Mure Murmure 4% Alc. Vol

Laissez-vous surprendre par ses murmures fruités, venez découvrir Mûre Murmure, une bière intense, légèrement sauvage où la mûre s’exprime en douceur, parfaite pour l’été, à savourer au bord de l’eau ou entre amis dans notre taproom. Une bière pale ale fraîche et gourmande, sublimée par un ajout de fruits rouges en fermentation. Au nez comme en bouche, les arômes de mure et fruits rouges s’expriment avec naturel, soutenus par une base maltée douce et légère. L’équilibre entre la fraîcheur fruitée, une amertume modérée et une finale sèche rend cette bière désaltérante. elle se boit facilement tout en offrant une belle intensité aromatique.
